Potato and Ham Salad

Homemade Potato SaladIngredients

5 (1kg) potatoes

1 small red capsicum

250g (11/2 cups) lean ham

2 hardboiled eggs

½ cup low fat mayonnaise

½ tablespoon seeded mustard.


1. Prepare eggs using the hard boiled method. Cool eggs in cold water and remove the shells.

2. Cut eggs into small pieces.

3. Boil the potatoes until they are soft. Cool under running water and then cut into bite size pieces.

4. Dice the ham and capsicum.

5. Place eggs, potatoes, ham and capsicum in a bowl.

6. Add mayonnaise and mustard.

7. Mix all ingredients together and serve.
