Meat and Vegetable Rissoles


500g low fat mince

2 potatoes

2 carrots

2 onions

1 small capsicum

1 egg

2 tablespoons flour

1 tablespoon vegetable oil


1. Peel and grate potatoes, carrots and onions. Finely chop capsicum.

2. Mix all ingredients (except the flour) together in a bowl so they stick together.

3. Take small handfuls of the mixture and roll into balls.

4. Toss the balls in a little bit of flour.

5. Heat fry pan on medium heat, put in a small spoonful of oil.

6. Cook rissoles until brown on both sides or cook on the BBQ until brown.
