French Toast with Fruit

1 large egg

¼ cup low fat milk

2 slices of bread (multigrain or wholemeal)

Cooking oil spray

Fresh or canned fruit to serve.


1. Beat the egg and milk together in a bowl.

2. Heat a frying pan over a medium heat.

3. Dip one piece of bread at a time in the egg mixture to evenly coat.

4. Lightly spray the pan with oil. Add the bread and cook in batches for 2 to 3 minutes on each side, or until golden.

5. Transfer to a plate and serve with fresh or canned fruit.
